Our history

It all started in the streets of TaoYuan, a small city in Central Taiwan. This is where Bowlba Co-Founder Chloe grew up working at her family’s restaurant ventures. After school, she would spend her time scooping boba and brewing milk tea. On the weekends, she would find herself at her family’s night market stand turning skewers and talking with everyone who would stop by her booth. It was then when Chloe developed her passion for food and community.  

Chloe’s first F&B venture was in 2018 with a cafe named Mocktails & Dreams. The cafe specialized in traditional bubble tea and obanyaki, Taiwanese wheel cakes. It was named the best bubble tea shop in Jersey City before it unfortunately had to close due to the pandemic.

During this time, Chloe began to reconceptualize an Asian-American fast casual eatery, which eventually led to the creation of Bowlba, after teaming up with innovative brand builders Amber and Emma.

For Chloe, Taiwanese food is childhood and joy. She founded Bowlba, so that she can share these exact memories, through delicious food, with the entire community. 

What is Taiwanese cuisine?

Taiwan is a beautiful Formosa located in East Asia. It is known for its bustling night culture, gorgeous nature paths, and friendly locals. Taiwanese cuisine reflects this exact diversity - heartwarming meals prepared with quality ingredients and served with love. It is best described as a mix of Japanese and traditional Chinese cuisine. Some staple dishes include beef noodle soup, stinky tofu, shaved ice, Taiwanese sausage, and pineapple cakes.
